Quero gravar em um arquivo txt uma relação que seria +- assim:

- Arquivos:



OBS.: Como fazer isto?

Você quer mapear qualquer coisa que o usuário tenha aberto, independente de estar em uma aplicação, ou quer mapear em um log quais tabelas ou arquivos ele utilizou, por meio da aplicação?

Você vai ter de gerar uma aplicação para monitorar a máquina. Tipo, com um timer, verificar no Task Manager, na lista de processos ativos, e ir gravando os resultados.
Teste isto, para começar. à partir deste, dá para seguir, se não houver algo mais fácil.
